Cheesecake Bars

Sorry this post was meant for the Rad Recipe site that I am a part of, but oh well I will leave it here anyway! These bars are very yummy and came from Carol W. in my ward.

O.k. it has been a while since I have posted and I know that I am a little bit late for a theme but better late than never! My theme for this week is anything that has cream cheese in it. I made these amazing bars the other day for my family. Enjoy!

2/3 c. finely crushed graham crackers
1/2 c. flour
1/2 c. chopped pecans
1/4 c. sugar
1/3 c. butter or margarine, melted
1 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 egg
1/2 tsp. grated lemon peel
1 T. lemon juice
2 T. finely crushed graham crackers

Stir together 2/3 c. graham crackers, flour, pecans and sugar. Add melted butter; mix until crumbly. Pat into ungreased 9x9-inch backing pan. Bake at 350 degrees for 12 minutes. Cream together cream cheese and sugar. Add eggs, lemon peel and lemon juice; mix well. Pour over baked layer. Bake at 350 degrees for 20 to 25 minutes. Sprinkle with the 2 T. graham crackers. Cool; cut into bars. Store in refrigerator. Recipe can be doubled.

Allie had fun playing with Lukie while Jaime went to the baby doctor. (Yep, she is having another one sometime in April!!!!) She enjoys being a little mother hen to him.

Our Superstars!!!

Zach and Melissa played amazing this past week. Zach's football team beat Century 36 to 6. Melissa's volleyball team beat Kimberly in 2 games. Here are some fun photos and videos of their games. Melissa is #2 and Zach is #23. Both of my kids can really jump!!!!

Cabbage Anyone????





Rachel came home with this little plant in a cup last spring and usually the plants that the kids come home with die before they get out in the ground but not this time. That little plant grew into a humongous cabbage. Now what do you do with cabbage? We don't eat a lot of cole slaw. If anyone has any ideas out there let us know!!!!

Zach Attach

J Town played Middleton last night in football. We beat them 56 to 18. Zach was AMAZING! He played so well that he was awarded player of the game last night. He may have even broken the school record in number of tackles in a game. If he didn't he came really close. It made you want to stand up and shout "that's my boy!"

We're back in school! Yeah!








The kids have all been back in school for a little over a week now. Abigail is adjusting to the long day and most of the time her lunch is not good, her sleep is not good and her day at school is not good. We have to work on looking at the positive side of things. Hannah is in Middle school and has a variety of teachers. She loves the varied schedule. Rachel has Kayla Cook (Sindy Black's younger sister) and is in there with her best friend, Kelly. Melissa is loving high school but she says that the classes are too long. She plays a mean game of volleyball. They just lost to Twin Falls tonight but not by much. They are both very competitive teams. We will get them next time, Jonah! She gets up most mornings at 5 a.m. for a 6 a.m. practice. Zach is back in the swing of things with just two years of high school left to go. He is taking some college credits this year through JHS and CSI. He is one of the main defenders on the Jerome High School football team. He is good at getting the guy with the ball! It will be fun to watch him and Melissa this year in sports. Allison started preschool today and didn't even blink an eye. She was extremely excited to go but when we got there she wasn't quite sure and wouldn't establish eye contact with anyone but she was happy when I picked her up. She did say that a little girl cried all the time and she has been doing the Hokey Pokey all day. Well that is all for now. I haven't gotten a picture of Zach yet, he has this thing about getting his picture taken. What's up with that????
